  • 1 tablespoon ghee

For the Rashmi Masala:

  • 1 cup mixed vegetables (carrots, peas, beans, and corn)
  • ½ cup paneer (cubed)
  • 1 medium onion (sliced thinly)
  • 2 green chilies (slit)
  • 1 teaspoon ginger-garlic paste
  • ½ cup yogurt
  • ¼ cup fresh cream
  • ¼ teaspoon turmeric powder
  • 1 teaspoon coriander powder
  • ½ teaspoon garam masala
  • 1 teaspoon cumin seeds
  • 1 tablespoon ghee or oil
  • Salt to taste

For Garnishing:

  • 2 tablespoons fried cashews
  • 2 tablespoons fried raisins

Instructions:

Step 1: Cooking the Rice

  1. Rinse the basmati rice under running water until the water runs clear. Soak it in water for 20 minutes.

  5. Add paneer cubes, turmeric powder, coriander powder, and garam masala. Mix well.
  6. Lower the heat and add yogurt, stirring continuously to prevent curdling.
  7. Pour in the fresh cream and mix well. Cook for another 2-3 minutes.
  8. Add salt to taste and soaked saffron milk. Stir everything together and turn off the heat.

Step 3: Assembling the Pulao

  1. In a deep-bottomed pan or a handi, layer half of the cooked rice.
  2. Spread the Rashmi masala evenly over it.
  3. Add the remaining rice on top to cover the masala completely.
  4. Sprinkle rose water for extra aroma (optional).
  5. Cover the pan with a lid and cook on low heat for 5-7 minutes to allow the flavors to blend.

Step 4: Garnishing and Serving

  1. Gently fluff the pulao using a fork.
  2. Garnish with fried cashews, raisins, and chopped coriander leaves.
