  • 2 large onions (finely chopped)
  • 2 tbsp ginger-garlic paste
  • 4 tbsp cooking oil or ghee
  • 1 tbsp red chili powder
  • 1 tbsp turmeric powder
  • 1 tbsp coriander powder
  • 1 tbsp cumin powder
  • 1 tsp black pepper powder
  • 1 tbsp salt (or to taste)
  • 2-3 bay leaves
  • 2-3 green cardamoms
  • 1 black cardamom
  • 1 cinnamon stick
  • 4 cloves
  • 1 tbsp garam masala powder
  • 2 tomatoes (chopped)
  • 6 cups water
  • Fresh coriander leaves (for garnish)
  • 2 green chilies (chopped)
  • Lemon wedges (for serving)

Instructions:

Step 1: Cleaning the Paye

  1. Rinse the paye thoroughly with water.
  2. Rub them with wheat flour and vinegar to remove any unpleasant odor.
  3. Scrape off any remaining hair or impurities using a knife or lemon.
  4. Wash again with fresh water and set aside.

Step 2: Cooking the Paye

  1. Heat oil or ghee in a large pot or pressure cooker.
  2. Add chopped onions and sauté until golden brown.
  3. Stir in ginger-garlic paste and fry for a minute until fragrant.
  4. Add chopped tomatoes and cook until soft.
  5. Mix in red chili powder, turmeric, coriander powder, cumin powder, black pepper, and salt.
