  • 1 tbsp coriander seeds
  • 1 tsp cumin seeds

  • 1 tsp black peppercorns
  • 1 small piece of cinnamon
  • 2 cloves
  • 2 green cardamoms
  • 1 medium-sized onion (chopped)
  • 4 garlic cloves
  • 1-inch ginger (chopped)

For the Handi Preparation:

  • 500g chicken (or paneer for a vegetarian version)
  • 2 tbsp oil
  • 1 large onion (sliced)
  • 2 tomatoes (pureed)
  • 1 sprig curry leaves
  • 1 tsp turmeric powder
  • 1 tsp red chili powder
  • 1 tsp garam masala
  • 1 cup thick coconut milk
  • Salt to taste

Step-by-Step Cooking Instructions:

Step 1: Preparing the Masala Paste

  1. Heat oil in a pan and dry roast the coconut until golden brown.
  2. Add dried red chilies, coriander seeds, cumin seeds, fennel seeds, peppercorns, cinnamon, cloves, and cardamoms. Roast for a minute until fragrant.
  3. Add onions, garlic, and ginger. Sauté until the onions turn golden brown.
  4. Let the mixture cool, then grind it into a smooth paste using a little water. Keep aside.

Step 2: Cooking the Handi

  1. Heat oil in a traditional clay pot (handi) or a deep pan.
  2. Add sliced onions and sauté until translucent.
  3. Add the curry leaves and tomato puree. Cook until the oil separates.
  4. Add turmeric powder, red chili powder, and salt. Mix well.
  5. Now, add the prepared masala paste and cook for 5-7 minutes on low heat.
  6. Add the chicken or paneer and coat it well with the masala.
  7. Pour in the coconut milk and let it simmer for 15-20 minutes until the chicken is tender and the flavors are well absorbed.
  8. Finally, sprinkle garam masala and mix well.
